Explore the world of food chemistry and toxicology with our group.

Our Interests

Our research focuses on food chemistry and toxicology with emphasis on toxicants formed in food, especially from animal sources, during processing. Specifically, we are interested in understanding the formation mechanism and mitigation strategies of HAAs, PAHs, and BPA. 

Our topics of interest involve utilizing food waste, protein hydrolysates, and food packaging.
